
Today I am doing a guest post for Mary Moh over at her wonderful blog Keep Learning Keep Smiling. Mary is one of the first visitors to my blog. She constantly leaves comments and continues to be a great encouragement to me. Her warm personality shines through her blog where she posts delicious homecooked meals shared with family and friends. When Mary asked me to do a guest post for her for Mother’s Day, I was very touched and honored to be given this opportunity. I was also very excited as this will be my first guest post. I thought for a few days about what I would share and finally came up with a dish that is quite lovely, yet simple enough for kids to prepare.

Here are the ingredients I used for the quesadillas. We love those brown rice tortillas. They are the best!

Ingredients
- 8 oz (227g) Brie Cheese, thinly sliced
- 6 rice tortillas, 8-9 inch diameter (or any flour tortilla of choice)
- 1 large mango, peeled and sliced ¼ inch thick
- 9 large strawberries, hulled and sliced ¼ inch thick
Instructions
Heat a non-stick pan over medium heat. Place a tortilla in the pan. Arrange some Brie slices along half of the tortilla topped by mango slices and a few more Brie slices.
Using a spatula, fold tortilla in half. Pan fry each side for 2 - 3 minutes until cheese is melted and tortilla is lightly browned. Repeat to make 3 mangoes and 3 strawberry tortillas. To serve, cut into quarters.
You can also try cooking apples with Swiss cheese.
