No-Bake Apricot Melon Energy Bites

Serves: 14 1½-inch balls
  • 1 cup (200g) dried apricot, chopped
  • ½ cup (3oz/85g) candied winter melon, chopped
  • ½ cup (60g) salted pumpkin seeds
  • ½ cup (50g) almond meal
  • 1 tbsp (5g) toasted sesame seeds
  • ⅔ cup (215g) raw honey
  1. Mix all ingredients in a large bowl until well combined and moistened. Add a little more honey if it appears too dry. Chill in the refrigerator for an hour.
  2. Roll and compact into 1½-inch balls.
  3. Store in air tight container and keep refrigerated.
