INGREDIENTS

  • ½ cup pearled barley or hulled barley (100g)
  • 1 cup candied winter melon (120g)
  • 8 cups water (2 liters)
  • 2 pandan leaves (rinse and knotted)
  • Sugar to taste**

INSTRUCTIONS

  • Rinse and soak barley for 30 minutes. Drain.
  • Place barley, candied winter melon, water, and pandan leaves in a large pot. Bring to a boil, reduce heat, and simmer for an hour.
  • Remove and allow to cool. Serve warm or chilled.

NOTES

** The candied winter melon itself is sufficiently sweet. Please add a little sugar if you prefer a sweeter drink.
