Simple and tasty Salmon Fried Rice using leftover grilled salmon, green beans, and eggs. Red chili peppers provide a little heat.

Ingredients
  • 2 tbsp vegetable oil
  • 2 cloves garlic (minced)
  • 1 red chili (seeded and chopped) (optional)
  • 4 oz grilled salmon (flaked) (115g)
  • 12 green beans (thinly sliced at a diagonal)
  • 3 cups cooked white rice (preferably kept overnight)
  • 2 tbsp soy sauce
  • ΒΌ tsp ground pepper
  • 1 large egg
Instructions
  1. In a large non-stick fry pan, heat vegetable oil. Add garlic and red chili (if using). Fry for 1 minute.
  2. Add salmon and green beans and continue to cook for 2 to 3 minutes.
  3. Then add cooked rice, soy sauce, salt, and pepper. Stir to get everything well mixed.
  4. Using the spatula, create a well in the center of the pan. Crack the egg in there and fold the rice back onto the egg. Continue to stir until the egg is cooked and rice is dry and fluffy. This will take 4 to 5 minutes.
  5. Serve immediately.
