Made from scratch creamy tender crisp Green Bean Casserole with fresh mushrooms. The quintessential side dish for the holidays.

Ingredients
  • 1 lb green beans (washed and drained) (450g)
  • 8 oz mushrooms (sliced) (225g)
  • 3 tbsp butter
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 3 tbsp all-purpose flour
  • ¼ tsp dried thyme
  • 2 cups milk (480ml)
  • 1 tsp salt
  • ¼ tsp ground pepper
  • 1 cup shredded cheese (4 oz/113g)
  • 1 cup crispy fried onions (50g)
Instructions
  1. Line up green beans on a chopping board a few at a time. Cut off the tops and tails.
  2. Bring a large pot of water to boil. Blanch green beans for 3 minutes. Remove with strainer and immediately place green beans in a cold bath to stop the cooking. Drain and transfer to a casserole dish. Mix in sliced mushrooms.
  3. Melt butter over low heat in a saucepan. Sauté onion and garlic for 2 minutes until soft. Add flour and stir constantly until mixture starts to brown, about 3 minutes.
  4. Stir in dried thyme. Gradually pour in milk whisking or stirring into a smooth bubbly sauce. Season with salt and pepper. Turn off stove.
  5. Pour sauce over green beans and mushrooms.
  6. Sprinkle cheese on the top. Bake in a preheated 350°F (180°C) oven for 25 minutes. Remove casserole from oven and sprinkle French onions on the top. Return to the oven and continue to bake for another 5 minutes.
  7. Remove and serve warm.
