Place minced garlic and olive oil in a small microwaveable bowl. Cook on high for 45 seconds. Remove and set aside.
Place potato wedges in a large bowl. Sprinkle seasoning and salt over wedges. Mix to get wedges well coated. Pour garlic oil** over wedges and stir to get everything well mixed.
Place wedges on a baking tray in a single layer. Bake at 425°F (220°C) for 40 to 45 minutes or until golden brown. Turn wedges every 10 minutes of so to get it evenly browned.
Remove and serve immediately.
Notes
**Strain the oil to remove the garlic if you prefer not to have it with the potatoes.
