If you are planning to use pineapple boat as container for fried rice, cut pineapple in half lengthwise. Carefully cut around the perimeter of the halved pineapple. Then cut down the middle lengthwise followed by several more cuts widthwise. Scoop out flesh with a spoon. Reserve 1 cup (180g) pineapple for the fried rice. Squeeze out as much juice as possible. Set aside.
In a wok or large fry pan, heat vegetable oil. Fry ham for 3 to 4 minutes until lightly brown. Add red and jalapeno pepper and garlic. Fry for 1 to 2 minutes. Then add pineapple and frozen green peas. Continue to fry for another 3 to 4 minutes.
Add rice, pepper, and soy sauce. Stir to get everything well mixed. Cook for another 4 to 5 minutes or until rice is dry and fluffy. Turn off heat and transfer to pineapple boat or serving dish.
