INGREDIENTS

  • ½ small pomelo yielding 1 cup (150g) flesh
  • ½ cup cilantro leaves (10g)
  • ½ cup large coconut flakes (toasted) (20g)
  • ¼ cup toasted peanuts ( coarsely chopped) (40g)
  • 1 tsp sesame seeds

Dressing

INSTRUCTIONS

  • Combine pomelo, cilantro, and peanuts in a large bowl.
  • Mix together all dressing ingredients in a small bowl. Pour dressing over ingredients in the large bowl.
  • Toss to get everything well mixed.
  • Sprinkle toasted coconut and sesame seeds over salad.
