Heat extra virgin olive oil in a large pot. Sauté onion and garlic for 2 minutes.
Add ground beef and cook until lightly brown, about 5 minutes.
Add Italian seasoning, paprika,
diced tomatoes, tomato sauce, tomato paste,
and chicken/beef broth. Cover and bring to a boil. Reduce heat and simmer for 10 minutes.
Remove lid. Season with salt and pepper.
Add dried macaroni. Stir to combine. Cover and cook for 15 minutes.
Check and stir every now and then to make sure that there is sufficient liquid to cook the macaroni. If not, add a little more chicken/beef broth.
When macaroni is cooked and tender, turn off stove. Sprinkle shredded cheese and chopped parsley on the top.
Allow goulash to sit for 5 minutes to melt the cheese before serving.
Notes
If using broccoli, please add broccoli after cooking for 10 minutes in Step 7 and continue cooking for 5 more minutes. Then follow Steps 8, 9, and 10 to complete cooking.
