Rinse and soak peanuts and red dates for 30 minutes. Drain. Peel lotus root with vegetable peeler. Cut lotus root cross-wise into ¼-inch thick slices.
Place all ingredients in a large pot and bring to a boil. Reduce heat to low and allow soup to simmer for 1½ to 2 hours. Skim off scum appearing on the surface. Season with salt.
Serve warm in individual bowls.
