Place all shrimp paste ingredient into a mini chopper bowl. Process until ingredients become a paste. Transfer to a bowl. Mix in 2 tablespoons sesame seeds.
Trim crust off sandwich bread. Spread a thin layer of shrimp paste on each slice of bread. Brush vegetable oil on the shrimp paste. Sprinkle remaining 1 tablespoon sesame seeds on the top of the top of the shrimp paste.
Flip half of the slices of bread on top of the other half like a sandwich. Cut each sandwich diagonally into triangles.
Place air fryer basket in the unit and close the hood. Set air fryer to 375⁰F (180⁰C) for 5 minutes. Press start to begin preheating.
When unit beeps, open the hood and arrange prepared shrimp sandwich in a single layer in the air fryer basket. Close hood to let shrimp toast cook.
When cooking is complete, remove shrimp toast to a plate. Serve immediately.
