Coconut Berry Smoothie

Coconut Berry Smoothie

It is February and there are two major celebrations this month – the Lunar or Chinese New Year and Valentine’s Day. This year, the Lunar New Year falls on February 10th. Preparations are currently in full swing for the 15 days festivities in most of East Asia. It is an exciting time and I do miss all the fun and activities. Over here, people are busy with sweet ideas for Valentine’s Day. After an entire month of whole grains, salads, fruits, and low fat dishes, we are now back to sweets and chocolates. Hopefully this time, it will only be a tiny smattering of indulgence. 😉

Having a smoothie is a good way to enjoy a little sweetness for the season. It is also a healthy way to incorporate more fruits and roughage into one’s diet. This Coconut Berry Smoothie is one I whipped up two weeks ago. It is chocked full of strawberries and blueberries with lightly sweetened vanilla coconut milk as its base.

Some two years back, coconut milk in cartons started appearing at the grocery stores. It is sold as a beverage and to me that is a little strange. Where I came from, coconut milk has always only been used in cooking. I actually bought my first carton out of curiosity. I was pleasantly surprised at its consistency and creaminess. Since then, I have been buying it occasionally mainly for use in my cooking. I must admit that I actually much prefer it to the canned ones. They do come unsweetened or lightly sweetened and flavored. The unsweetened version works well in curries while the lightly sweetened one is great for desserts.

Coconut Berry Smoothie

This Coconut Berry Smoothie was very creamy and delicious! The strawberries and blueberries combined really well with the lightly sweetened vanilla coconut milk. There was no need for any additional sweetener or sugar. I will definitely use this coconut milk again for future smoothie concoctions. Do give it a try. You will not be disappointed.

    I’ve been doing green smoothies and even have a Red green smoothie that I’m posting for Heart Health Month – works for Valentine’s Day, too, come to think of it 🙂 I always use either coconut milk and almond milk – it tastes better with fruits, berries, and greens, I think.     Lovely! I wish I have fruits on hand to make smoothie. My kids clean out soft fruits so fast that there is aboslutely no opportunity to make any smoothies. They love smoothies but love the soft fruits better. I agree with you that the coconut mulk is simply delicious used in cooking too. I can imagine smoothies made with cocnut milk is much lighter in palate.
