At this time of the year, the baking aisles at the grocery stores are filled with all kinds of special edition chips, dried fruits, and ingredients not seen at other times. It is one of the busiest aisles and it is always fun to walk through and discover a new ingredient for the holiday baking. In fall, I found Cinnamon Chips and used them in these GF Pumpkin Muffins. I was very pleased when Blogher chose to feature them. You can read about it here.

Cherry Chips

Two weeks ago, I came across yet another ingredient which I could not resist. These Cherry Chips were just calling out to me and I was curious as to their taste. They together with mint chips would be perfect in the White Christmas Cups I made last year. However, this time I have other plans for these ruby beauties.

Quick and Easy Coconut Cherry Chip Cookies

I envisioned a ruby studded white cake with pure white frosting decorated with more of these tiny kisses. Instead, I settled for something simpler and added them to a basic coconut flakes cookie. I really liked the way these Coconut Cherry Chip Cookies turned out. The taste is quite interesting with a hint of maraschino cherries.

The cherry chips are quite sweet and because of that I drastically reduced the sugar in the cookies. I ran out of dried dessicated unsweetened coconut after making the gluten-free version. All I had left in my pantry was dried large unsweetened coconut flakes which I used in the all-purpose version. I actually like them better as the large flakes made the cookies smoother and prettier.

Ingredients
  

  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • 1 stick butter (½ cup/115g)
  • ¼ cup sugar (55g)
  • 1 tsp vanilla extract
  • ¾ cup cherry chips (120g)
  • ¾ cup unsweetened coconut flakes (45g)

Instructions
 

  • Combine flour and baking soda in a medium sized bowl. Preheat oven to 375°F (190°C).
  • Beat butter, sugar, and vanilla until well combined, about 2 minutes. Add flour and beat till dough comes together**.

  • Mix in cherry chips and coconut flakes. Form into walnut-sized balls and flatten slightly. Place on cookie sheet 2 inches apart.

  • Bake in oven for 10 to 12 minutes or until edges are lightly golden. Cool cookies on a wire rack.

Notes

**Do not worry if dough seems to be loose and separate. Continue beating for about 2 to 3 minutes and it will come together to form a soft dough.

Gluten-Free Coconut Cherry Chip Cookies

Here are the gluten-free cookies using dried dessicated unsweetened coconut. I would use large coconut flakes next time. It did not affect the taste but the large flakes will give a smoother and prettier cookie.

  • 1 tsp guar gum
  • 1 stick butter (½ cup/115g)
  • ¼ cup sugar (55g)
  • 1 tsp vanilla extract
  • ¾ cup cherry chips (120g)
  • ¾ cup unsweetened coconut flakes (45g)

Instructions
 

  • Combine flour, baking soda, and guar gum in a medium sized bowl. Preheat oven to 375°F (190°C).
  • Beat butter, sugar, and vanilla until well combined, about 2 minutes. Add flour and beat till dough comes together**.

    Oooo I haven’t seen the red cherry chips before! I have used the cinnamon and toffee chips so far. I am looking for the green mint chips, I haven’t been able to find them this year. I want to send them to a friend in Malaysia.

      You may have to hurry to get these cherry ships as they won’t be on the shelves for long. As for the mint chips, I believe those are from Toll House and is a mix with dark chocolate chips. I used them last year here http://www.rotinrice.com/2010/12/white-christmas-cups/.

    I was just at the grocery store today stocking up in all kinds of cookie chips and coconut too. I am so ready to bake, bake, bake. 🙂 These cookies look so good… I love cherry and the coconut makes it even tastier. 🙂 The countdown to Christmas is on!
