Zucchini Loaf

When someone mentions zucchini bread, one would normally think of a non-yeasted quick bread. This is a sweet bread that is cake-like and quite delicious. It is great for brunch, snack, or even afternoon tea. For breakfast or dinner, a yeasted Zucchini Loaf is preferred and zucchinis work just as well here.

Since zucchini is such a mild vegetable, I added some sunflower and pumpkin seeds to provide greater flavor and texture to the bread. I also added a little oat bran in the bread for additional fiber. This is a healthy and tasty loaf, great as an accompaniment to soups or as a sandwich bread.

    Zucchini bread…never even thought to make bread with zucchini. Now that's thinking out of the box Biren. I usually stir fry zucchini with eggs but I never would have thought to make bread with it. That is a great idea since zucchin is not too overpowering in flavor. Another great recipe Biren.

    One of my husband's customers gave him a variety of breads for Christmas. That was the first time I had zucchini bread. I was surprised, it was actually good. Your version uses pumpkin and sunflower seeds. How interesting. I'd love to give a try.

    [email protected] – I do a lot of fried rice and stir-fries with zucchinis too. Since they are so mild, they go well with most other ingredients. Surprisingly good in breads and even cakes!

    @Xiao Yen Recipes – I discovered zucchini bread some years back and have been tweaking the recipe. I really like this version with the buttermilk and olive oil. I hope you will give it a try.

    @Kamalika – Making breads with the bread machine is not difficult. Just measure out the ingredients and the machine does the rest πŸ™‚

    I'm addicted to breads, it's my weakness. If I'm on a diet I can cut everything, but don't touch my bread. And using zucchini just gives me another reason to keep loving it. It looks delicious I wish I had a slice of you bread now for my Breakie. πŸ™‚

    It looks so great! Can I make it by hand, not using bread machine? I think then the technology will be different, may be I should make a starter with yeast, water, flour and sugar first?

    @Irina – Thanks for visiting! Yes, you can definitely make it by hand. I would combine all the dry ingredients in a large bowl and then add the buttermilk and olive oil. Mix and knead for 10 to 15 minutes until smooth. You may have to add a little more buttermilk or flour as needed. Do remember that the more flour you add, the more dense and heavy the loaf will be. Cover and let dough rise for about 45 minutes to an hour. Gently punch down and shape loaf and let rise for another 45 mintues to an hour before baking in the oven. I hope this helps πŸ™‚
