If you like sausage and eggs, you will love Scotch Eggs wrapped in sausage meat, breaded, and air fried. They are traditionally deep fried, but now you can enjoy these Air Fried Scotch Eggs with no guilt. 😉 They are delicious and so fun to eat.

Just As Delicious

The wonderful thing about air fried foods is that they taste just as good and sometimes even better than their deep fried counterpart. Very little oil is needed and cleanup is a breeze because everything is contained in the air fryer.

Case in point are these Air Fried Scotch Eggs. As with many other air fried recipes, I only needed to make a small adjustment to my original Scotch Eggs recipe. The meat tends to want to break apart when air fried due to it shrinking when cooked, exposing the egg in the middle. Adding a lightly beaten egg to the meat as a binder seem to solve the problem. It also keeps the meat moist with the dry heat of air frying and slightly longer cooking time.

Start With Soft Boiled Eggs For These Air Fried Scotch Eggs

For Scotch Eggs with a creamy yolk, start with soft boiled eggs. Do not overcook the eggs since they will be cooked one more time. Gently boil them just long enough for the egg whites to cook so that they can be peeled.

Cooking The Eggs

Place eggs in a saucepan with cold water. Bring to a boil over medium heat. When water comes to a boil, reduce heat to medium low and simmer for 3 minutes. After 3 minutes, immediately drain the saucepan and fill it with cold water. Shocking the boiled eggs in cold water causes the egg whites to contract. If you allow them to cool for 15 to 20 minutes, they will be much easier to peel. Be careful when peeling the shell as the egg can be a little soft.

Preparing The Meat

You can use all sausage meat but I like to use a mix of sausage meat and ground pork flavored with dried thyme, ground pepper, and Worcestershire sauce. I used a little extra meat and added an egg to bind the meat together since air frying can cause the meat casing to split open. There is no need to add an egg to the meat when deep frying. Divide the meat into four equal portions.

Wrapping The Eggs With Prepared Meat

Take a portion of meat and roll it into a ball between your palms. Then, press the ball of meat into an oval shaped patty that is large enough to wrap the egg. Roll an egg in flour and place it in the center of the meat patty.

Wrap the meat patty around the egg and form into a larger shaped egg. Make sure the meat is wrapped evenly and smoothly around the egg. Place on a plate and repeat with the remaining three eggs.

Breading The Meat Wrapped Eggs

Prepare three shallow bowls. Fill one with all-purpose flour, another with lightly beaten egg, and the third with breadcrumbs. You can use any kind of plain or seasoned breadcrumbs.

Roll a meat wrapped egg in flour, dip it in the lightly beaten egg, and coat it with breadcrumbs. Once all the meat wrapped eggs are breaded, brush some vegetable oil over the breading. They are now ready for air frying.

Air Frying The Encased Eggs

It only takes about 6 minutes to deep fry these meat wrapped eggs but you will need to air fry them at 390⁰F/200⁰C for 11 minutes to keep the egg yolk creamy. Flip the eggs after 5 minutes so that they cook more evenly.

  • 5 oz ground pork (140g)
  • ½ tsp dried thyme
  • ¼ tsp ground pepper
  • 2 tbsp Worcestershire sauce
  • 2 tbsp all-purpose flour
  • ¾ cup breadcrumbs ** (55g)
  • 2 tbsp vegetable oil
  • 4 tbsp sweet relish (optional)
  • 4 tbsp ketchup (optional)

Instructions

  • Place 4 eggs in a medium saucepan covered with cold water. Place lid on the saucepan. Boil over medium low heat for 3 minutes.
  • After 3 minutes, immediately drain the saucepan and fill it with cold water in the sink. Allow eggs to cool for 15 to 20 minutes. Then, carefully peel the eggs.
  • Combine sausage meat, ground pork, dried thyme, ground pepper, and Worcestershire sauce in a medium bowl. Mix well with a spatula. Divide into 4 portions.

  • Flatten a portion of meat mixture in your palm. Roll a peeled egg in flour, then place in the middle of the meat patty. Gently shape the meat patty evenly over the egg, molding and sealing it. Place on a plate. Do the same for the remaining 3 portions of meat and peeled eggs.
  • Roll the meat wrapped egg in all-purpose flour, then dip in egg, and coat well in breadcrumbs. Repeat for the 3 remaining meat wrapped eggs.
  • Brush vegetable oil over the breading of all 4 meat wrapped eggs.
  • Place air fryer basket in the unit. Close the hood and set air fryer to 390⁰F (200⁰C) for 11 minutes. Press start to begin preheating.
  • When unit beeps, open the hood and arrange meat wrapped eggs in the air fryer basket. Close hood to let them cook.
  • After 5 minutes, open the hood and flip the eggs. Close the hood and continue cooking for the remaining 6 minutes.
  • When cooking is complete, remove Scotch Eggs and serve with sweet relish and ketchup.
