Ever since I made my first loaf of Sweet Potato Yeast Bread some time back, I have always wanted to make a loaf of Banana Yeast Bread. I am not sure why I never got round to it until now but it is better late than never, right? With two ripe bananas that needed to be used, they ended up in this loaf of bread. I really like how it turned out.
A Beautiful Sandwich Loaf
Like all banana bread and cakes, it was really fragrant when warm. In the case of this yeasted loaf, the fragrance mellowed out when completely cooled. Still it made for a very delicious sandwich loaf. It rose beautifully in the bread machine and came out with a very tender crumb.
Always allow your loaf of bread to cool completely before slicing. I know it is very tempting when it is fresh out of the oven but I assure you it is worth the wait. When allowed to rest and cool completely, the crust will soften slightly and there will be less crumb when cut into. With a little practice, you will get close to perfect slices. I like to leave my bread overnight and only do the slicing the next day.

Banana Yeast Bread
Ingredients
- 1 cup water (240ml)
- 3 cups unbleached white bread flour (450g)
- 2 tbsp quick rolled oats
- 1 tsp ground cinnamon
- 2 ripe bananas (mashed)
- 2 tbsp butter
- 2 tbsp brown sugar
- 1 tsp salt
- 1 tbsp non-fat dry milk
- 1½ tsp active dry yeast
Instructions
- Pour water into the bread machine pan. Sprinkle flour, rolled oats, and ground cinnamon over liquid.
- Add mashed bananas over flour. Add butter, sugar, salt, and non-fat dry milk in separate corners of the bread pan. Make a shallow indentation in the center and add yeast. Snap bread pan into machine and set it to basic setting. Press start.
- Remove kneading paddle after final kneading.
- When bread is ready, remove from the pan and cool on a wire rack.

Excellent rise and lightness! I used a teaspoon of cardamom instead of the cinnamon. The flavour went well with the banana, but a whole teaspoon is a bit overpowering. Would use half the amount next time

Yes, this bread is one of our favorites. It is tender and light. Maybe use 1/2 teaspoon cardamom next time. 🙂

I just baked this bread , I used half whole wheat half bread flour , 2/3 cup raisin and I set it on 1 1/2 loaf . I took it out 9 minutes before the time .the bread is scrumptious very nice dough. The only problem it caved in while baking in the bread machine . It’s perfectly cooked I am wondering if I used to much raisins I also added whole flaxseed seeds .its ok it’s good I love to use my bananas in the bread , it adds good flavor with almost no sugar.

The bread caved because of over proofing. Try reducing the amount of yeast.

I gently lift one side of the dough to remove the paddle so that it will not created a large hole at the bottom when it is baked. With the paddle removed, there is only a tiny hole at the bottom after it is baked.

Help! Mine came out like batter then collapsed into a hockey puck. Can you tell me approximately how much mashed bananas are two in your recipe?

If it is like batter, then the dough is too wet. Add a little more bread flour until it is no longer sticky. The bananas I used are standard size found at the grocery stores.

Haha! I never liked the big hole in the middle when I sliced the loaf and so I figured I should take out the paddle. It was a bit of trouble at first but then I love the result and got use to that extra step. 🙂

Great recipe! Simple and delicious. I used 2% milk and it worked very well. I leave the bread to cool for several hours before slicing.
