It always amazes me how quickly the bare branches of the trees are covered with this light green haze once the weather starts warming up. All it takes is a few days of strong sunlight and those tiny yellow green leaves will emerge. The mornings are still pretty cool at this time of the year but it is only a matter of time before it gets warmer and warmer. Warmer days call for lighter foods. Cool refreshing smoothies become a wonderful option for breakfast. I recently made this Cantaloupe Pineapple Smoothie and really liked the way it turned out. I enjoyed how easily it can be sucked up with a straw. It was truly light, juicy, and satisfying!
Although it is still a little early in the season, cantaloupes are already making their appearance at the grocery stores. They usually peak from June through September when they are found in abundance. Cantaloupes are at their sweetest, juiciest, and most fragrant at that time. Our family enjoys them simply cut and eaten on its own or used in sorbets, salads, and smoothies. They do combined well with a lot of other fruits. I combined them with mangoes in this delicious Cantaloupe and Mango Sorbet last year. Some weeks back, I mixed them with strawberries to make this pretty and tasty Cantaloupe Strawberry Salad which I posted over at my other blog, Tea Tattler.
I kept today’s recipe very simple by using just cantaloupe, pineapple, and unsweetened almond milk. I usually prefer not to add any sweetener to my smoothies as the fruits are sweet enough for me. If you prefer it a little sweeter, please add a teaspoon of honey to the mix. I think you will enjoy this Cantaloupe Pineapple Smoothie. Do give it a try.
