Cream of Celery Soup made using homegrown Chinese white celery with snow white stalks. You can use regular celery to make this delicious soup.

Delicate and delicious Cream of Celery Soup.

What do you do with the celery when you grow lots of them? You make soup. It is a wonderful and delicious way to use up a lot of celery at one go. I use 1½ pounds of celery for 8 servings of soup to give it a nice celery flavor. It may seem like a lot but it really isn’t.

Chinese White Celery

One of the joys of having your own vegetable garden is being able to grow different varieties of vegetables you would not otherwise find at the grocery stores. In the case of celery, I was delighted to find Chinese white celery seeds online and this is my second year growing them successfully. Last year, I grew them in the greenhouse. This year, I dedicated an entire 8 feet x 4 feet covered raised bed for celery. Half the box was planted with Chinese white celery and the other half was Utah Tall celery which you normally find at the grocery stores. It was a great success and we had a lot of celery.

I was harvesting celery all summer. When the weather turned cooler towards the end of October, I made frost cover for the raised bed so that the celery could continue growing. I continued harvesting right through the middle of November before the night time temperatures got too cold for them. It was a good long growing season for the celery.

Celery Soup

Initially, I was making a lot of stir fries with the celery. Then, one day it dawned upon me that I should make soup with it and so I did. So far, I have made this Cream of Celery Soup, Celery Potato Soup, and Chicken Noodle Soup with Celery. They were all good and I used up lots of the celery. Do use the leaves as well as they give a lot of flavor to the soup.

Hand Held Blender

When it comes to making cream soups, a useful tool to have in the kitchen is a hand held blender. It makes the work of blending the hot soup a lot easier and with less hassle. Alternatively, you can allow the soup to cool slightly before transferring it to a regular blender to puree the soup.

Ingredients
  

  • 6 tbsp butter
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1½ lbs celery (stalks and leaves, chopped) (675g)
  • ⅓ cup all-purpose flour (50g)
  • 6 cups (1.45 liters) chicken broth
  • Salt to taste
  • ½ tsp ground pepper
  • 1 cup half-and-half (or milk) (240ml)

Instructions
 

  • In a large pot, melt butter. Add onions, garlic, and celery. Sauté until soften, about 5 minutes.
  • Add all-purpose flour and continue to stir for another minute.
  • Pour in chicken broth. Bring to a boil. Lower heat and allow soup to simmer for 15 minutes.
  • Add salt and ground pepper. Turn off stove.
  • Puree soup with an immersion blender until smooth.
  • Turn on stove again. When it comes back to a boil, add half-and-half or milk. Allow soup to heat through.
  • Turn off heat and serve warm.
