Watermelon Lime Cooler

This super refreshing Watermelon Lime Cooler is a great way to beat the heat on hot summer days. Seltzer or club soda and lime make it sparkle.

It is now slightly past mid August but there are still many warm summer days left to enjoy. Here in Minnesota, many of the little and big kids start going back to school on Monday. It usually is the hottest time of the day when they get out of school. Whether you are waiting for them in the car or at the bus stop, you know you will need something super cool to drink when you get home. This Watermelon Lime Cooler topped with seltzer and lime juice is a great way to beat the heat. Best of all, it takes only minutes to prepare.

Seedless Watermelons

There are still lots of watermelon being sold at the grocery store. I like the round personal size watermelons because they are more or less seedless with only a few white immature seeds. They also fit easily in the refrigerator to be chilled and are just about the right size for our family. Half the watermelon is sufficient to make four of these Watermelon Lime Cooler, leaving the other half for us to eat simply as an after dinner dessert.

Basil Leaves as a Garnish

This time round, I garnished the cooler with basil leaves because I have three beautiful pots of them growing on our patio. Mint leaves would work just as well. I think the little bits of green peaking out of the cooler makes it look even more cool and inviting. Do give it a try.

Ingredients

• 2 cups chilled watermelon chunks
• 1 tbsp lime juice
• Ice cubes
• a few basil or mint leaves
• 2 cups seltzer or club soda (240ml)

Instructions

 

• Blend watermelon chunks and lime juice in a blender.
• Fill two glasses half full with watermelon juice. Add a few ice cubes and basil or mint leaves in each glass.
• Top with seltzer or club soda and enjoy.
