Carrot, Pear, and Flax Smoothie

It’s Friday again and time for yet another smoothie! Don’t you just love Fridays? I do. The thought of having two full days ahead with little to no schedules to keep makes me smile. How I look forward to the weekends. It is a chance for me to sleep in a little and spend some time with hubby and boys. It is also a time to try out new recipes like this Carrot, Pear, and Flax Smoothie because there are always eager taste testers around. 🙂

This will be an especially sweet weekend because Ro-Taro will be home from college for spring break. That means I’ll be busy cooking his favorite dishes in the next few days. I have more or less planned a menu for the week and it is going to be a good one. 🙂 Ro-Taro and R-Jiro both love meaty dishes and so there will be lots of that. They are growing young men and need all the protein they can get. That said, they do eat lots of vegetables too. A typical home cooked dinner for us consists of one meat dish (usually with some vegetables mixed in), one vegetable dish, and either a clear soup, tofu, or savory side dish with a mix of brown and white rice.

Carrot, Pear, and Flax Smoothie

I seldom ever cook lunch when I am alone but since Ro-Taro will be home, I will likely cook simple things like fried rice or noodles which he loves. I may have a bite or two but a smoothie works just fine for me. I do not make a smoothie every day but it is a nice to have once or twice a week. I made this two weeks ago and enjoyed the somewhat unusual combination.

I bought a bag of golden flaxmeal for this Spiced Kumquat Nut Bread not too long ago and the packaging says that flaxmeal is also good in cold or hot cereals. I have been wanting to try it in a smoothie and I did just that with this orangey carrot, pear, and flax smoothie. Flaxseed though high in calories, is rich in Omega-3 fatty acids and lignans. It is also a good source of fiber and protein and a little goes a long way. I only added a teaspoon for each serving. It gave the smoothie a slightly nutty flavor. Do give it a try!

    What a healthy and beautiful drink. I love that you added flax…. but it’s all about the carrot and pear when you look at the glass. 🙂
