Pita pockets are one of my favorite sandwich breads. I really like the way they are made to hold all the desired fillings in their deep pockets. Filled pita pockets make a lovely and very appetizing presentation. They are also very portable and is greatly suited for the lunch box.

When my boys were little, I often bought pita pockets to make their sandwiches. These sandwiches were much neater and easier for their little hands to handle. The filling was well contained in the deep pockets where they should be and not all over the place. They were also not soggy because the pockets were relatively thin as compared to regular bread.

Being a fan of pita pockets, I really should make my own. I have read that they are relatively easy to make. Perhaps someday I will. For now, I am contented to buy a pack whenever I feel inclined to. They can be easily found at most grocery stores.

I was out and about yesterday and by the time I was done with my errands, I realized I would not have enough time to cook a full meal for dinner. I quickly went by the grocery store to pick up an 8-piece pack of grilled chicken. With that, I only needed to cook the rice and do a stir fry vegetable. Knowing that there will be leftover chicken, I also picked up a pack of pita pockets for sandwiches the next day.

I assembled these Grilled Chicken Pita Pockets for Ro-Jiro’s lunchbox this morning. I placed the Ranch dressing separately in a little container. For Ro-Ri San, I made a chopped salad with some of the grilled chicken. Ro-Jiro was more than happy to have sandwiches instead of a rice meal for his lunch today. 🙂

Ingredients
  

  • 1 whole grain pita pocket
  • 1 grilled chicken breast (thinly sliced)
  • 1 cup baby spring mix
  • 1 tomato (thinly sliced)
  • Dressing of choice

Instructions
 

  • Cut pitas in half and open pockets. Fill each pocket with half of the grilled chicken slices, baby spring mix, and sliced tomatoes. Drizzle with dressing.
  • Serve immediately.

    Thanks for the idea of lunchboxing these pretty pockets. As they say, less is more, and this recipe is spot on. The next time my boys have their lunches at school, these will be in their lunch boxes 😉 Thanks for sharing….

    Pita are truly easy to make! all you have to do is roll out the bread dough thinly and cut in rounds and then bake. They will miraculously puff up!
