Our short reprieve from the cold and snow ended yesterday when we were dumped with more than a foot of snow. The temperature dived below freezing making it a little harder to bear this time after the “warmer” temperature of the past week. Ro-Ri San and the boys raked the roof and cleared the driveway three times. They were out there again this morning clearing the driveway so that Ro-Ri San could drive out to get to work. The only consolation is that it is President’s Day and there is no school today.

Noodles for Lunch

Since yesterday was not a day to be out and about, I made something really quick and easy for lunch. This Japanese roux base curry noodles is really simple to prepare if you have the curry sauce mix on hand. There are very few ingredients required and you’ll have a steaming bowl of delicious noodles in no time. This reminded me of the Japanese Curry Ramen I had in Yokosuka last June.

Udon or Ramen

Please use the kind of noodles you prefer. Both udon or ramen will work fine. You can also vary the toppings. I used chikuwa in place of kamaboko (fish cake), and added some sugar snap peas in this Curry Ramen.

INGREDIENTS

  • 1 carrot (sliced)
  • 1 packet kamaboko (sliced) (6 oz/170g)
  • 1 lb udon (450g)
  • 3 tbsp vegetable oil
  • 8 oz ground pork (225g)
  • 2 medium onions (chopped)
  • 1 sealed packet S&B Golden Curry Sauce Mix (4.2 oz/120g)
  • 6 cups water (1.5 liters)
  • Salt to taste
  • Green onions (F=finely sliced )
  • Nori

INSTRUCTIONS

  • Bring a big pot of water to boil. Blanch carrots. Remove. Add kamaboko slices and boil for 2 to 3 minutes. Remove. Next add udon and cook 2 to 3 minutes or as per packaging instructions. Drain and rinse under cold water. Set aside.
  • In a medium sized pot, heat vegetable oil. Add ground pork and onions. Fry until onions are lightly brown, about 5 minutes.
  • Add curry sauce mix. Stir until it dissolves.
  • Pour in 6 cups (1.5l) water and bring to a boil. Add a little salt if necessary. Reduce heat and allow to simmer for 5 minutes.
  • Divide noodles into 4 bowls. Pour soup over noodles. Arrange slices of kamaboko, carrots, and nori on noodles. Sprinkle with green onions. Serve immediately.

    Simple but tasty. I love the chewy texture of udon but have never tried it with curry flavoured soup. I’m sure this will be a hit with the children.

      This curry noodles is very simple to make and not very spicy even though I used the medium hot sauce. I think you will enjoy it. ๐Ÿ™‚

    My kiddies love those kamaboko slices, I think it’s the pretty pink colour and shape. The presentation of your noodles is beautiful (as always). Ick, sorry about the last dump of snow. Let’s hope it’s the last big snow fall for this winter. I’m glad you have such wonderful helpers though. My little ones need help just walking in deep thick snow. Teehee.     I used to turn my nose up at those Japanese instant curry paste blocks…… until I actually tried it! They are actually really delicious, as I was quite shocked to find out LOL I have never thought of making curry noodles with it though – thanks so much for the lovely inspiration.       These curry paste bloks are really quite good and they make short work of a tasty but mild curry. Ro-Jiro prefers Japanese curry to the spicy ones that I make from scratch.

    I usually have udon noodles with black pepper sauce, my favourite. Never tried it in curry before. This is just perfect for cold weather and rainy days! Looks really scrumptious!

      Thanks Kristi! I slice the carrots into coins and then use a vegetable cutter, very similar to that of a cookie cutter to cut out the shapes.

      Stay warm. I hope you will not get as much snow as we did.

    Biren, now I know what to do with these Golden Curry Sauce Mix. I have seen lots of these sauce mixes at my local chinese shop and often wonder what you do with them. I think this would be a lovely introduction of curry udon for my kids, and a speedy one for the grownups!

      This curry sauce mix comes in three levels of heat. I bought the medium hot but to me, it is still very mild. I think your kids will enjoy this curry udon.
