Mango Pecan Salad with Creamy Basil Avocado Dressing
Ingredients
- 1 package spring green salad mix (5 oz/140g)
- 1 mango (peeled, seeded, and cubed)
- ¼ cup pecans (toasted) (25g)
- A handful basil leaves
Creamy Basil Avocado Dressing
- 1 ripe avocado
- 1 clove garlic
- ¼ cup fresh basil leaves (10g)
- 2 tbsp lime juice
- ½ cup low fat plain yogurt (115g)
- ¼ tsp salt
Instructions
- Slice the avocado in half and remove the pit. Scoop the flesh into a food processor. Add garlic, basil leaves, lime juice, yogurt, and salt. Blend until smooth.
- Place spring greens, mango, pecans, and basil leaves in a salad bowl. Drizzle creamy basil avocado dressing over the top. Toss salad to coat.
- Serve immediately.
