No-Bake Apricot Melon Energy Bites

I am a huge fan of dried fruits and nuts. There is always a supply of them in my pantry which I snack on throughout the day. It is no wonder I was captivated by these fruit and nut studded energy bites that have appeared on food blogs recently. They looked so good I knew I had to make some for myself soon. I played around with whatever there was in my pantry and came up with these No-Bake Apricot Melon Energy Bites. They have a sweet tart flavor and can be pretty addictive. Needless to say, I adore them. Even the boys said they were good.

I am very pleased with the way these No-Bake Apricot Melon Energy Bites turned out. They are lighter in color than most, almost as if studded with gems. There is no peanut butter or oats in them. Instead, I used almond, sesame seeds, and raw honey as the binder for the dried apricots, winter melon, and pumpkin seeds. The fruits and nuts are purposely left chunky and unprocessed. That made them super easy to put together.

Raw Honey

I used raw honey in this recipe. It is unheated, pure, unpasteurized, and unprocessed honey with a margarine-like consistency. It looks milkier than its pastuerized and filtered counterpart. (Source: Benefits of Honey) Please use regular pasteurized honey if you prefer. Since pasteurized honey is more liquid, the amount required may differ. Only use as much as is needed to hold all the ingredients together.

Candied Winter Melon

Candied winter melon (táng dōng guā) is easily available at Asian grocery stores. They are often used to sweetened drinks or as a filling in Chinese desserts. You can see a picture of it in this Barley and Candied Winter Melon Drink.

No-Bake Apricot Melon Energy Bites

These No-Bake Apricot Melon Energy Bites are so tasty yet so easy to put together. They are perfect for breakfast, snack, or even dessert.

Ingredients
  

  • 1 cup dried apricot (chopped) (200g)
  • ½ cup candied winter melon (chopped) (3oz/85g)
  • ½ cup salted pumpkin seeds (60g)
  • ½ cup almond meal (50g)
  • 1 tbsp sesame seeds (toasted) (5g)
  • 2/3 cup raw honey (215g)

Instructions
 

  • Mix all ingredients in a large bowl until well combined and moistened. Add a little more honey if it appears too dry.
  • Chill in the refrigerator for an hour.
  • Roll and compact into 1½-inch balls.

  • Store in air tight container and keep refrigerated.

    what is candied winter melon? this looks good . . . .but I have never heard of this! BTW – my husband is Guyanese . . . .just wondering (the title of your site make me think you are too?!)
