Pasta is one of those things you can easily whip up when you are running late. I always have a stock of spaghetti, linguine, rotini, and various types of pasta. Jars of dried herbs are also a must in the pantry. Shrimps and sausages can be defrosted in no time.
Ro-Ri’s Shrimp and Apple Sausage Spaghetti
1 package (16oz) spaghetti
½ lb shrimp, peeled and deveined
4 apple pork sausages, cut into disks
1 small green pepper, diced
1 medium sized tomato, diced
2 tsp minced garlic
4 tbsp olive oil
1 tsp dried basil
1 tsp Italian seasoning
½ tsp ground pepper
½ tsp red pepper flakes
2 tsp salt
Cook spaghetti as per packaging instructions. Drain and set aside. In a large pan, add 1 tbsp olive oil, sauté sausages till slightly brown. Add shrimps and cook till shrimps curl and turn pink. Remove and set aside.
In the same pan, add the remaining oil. Sauté minced garlic and green peppers. Add red pepper flakes, basil, and Italian seasoning. Give it a good stir. Add diced tomatoes. Finally add spaghetti, cooked shrimp, sausages, pepper, and salt. If it is a little dry, add 1/4 cup water. Stir to mix well.
