Sweet Rice Cake with Mango Custard Topping

The past week has been really exciting for Roti and me. I gave Roti a more updated look with a new banner and new comment system and moved some of her ‘real estate’ around. Thanks to Foodbuzz, I am now a Featured Publisher.

On Wednesday, I was given the great honor of doing a guest post for Mary Moh at her ever popular blog Keep Learning Keep Smiling. To top that, the main post picture was accepted by TasteSpotting and we had visitors from all over, including from Facebook and Twitter. I am humbled by your response. Many left lovely comments at Mary’s blog as well as over here. Thank you for your support and encouragement. I couldn’t have done it without you and my dear family for continuing to cheer me on.

I also want to thank Denise of Quickies on the Dinner Table for sharing these awards with me. Like Mary, I met Denise through blogging and we have become friends even though we have never met. She is witty and charming and her blog is a delight to read. If you have not already done so, I hope you will visit her blog soon.


The guest post I did for Mary was a crepe or quesadilla using luscious brie cheese. It makes a healthy and delicious breakfast but I do realized that some moms out there may not appreciate cheese as they did not grow up with it. Today’s recipe is based on a classic Nyonya dessert known as Gading Galoh. The original recipe has a layer of sweet glutinous rice topped with an egg custard. I have modified the custard to include mango puree to give it a slightly tangy taste which goes wonderfully with the sticky rice layer. The mango custard layer will be softer and not as smooth as the regular egg custard layer because of the mango puree. It will require refrigeration for it to set.


Sweet Rice Cake with Mango Custard Topping

Sweet Rice Layer
1 cup glutinous (sweet) rice, soaked for at least 4 hours
⅔ cup coconut milk (If using canned coconut milk, mix ⅓ cup water to ⅓ cup coconut milk)
½ tsp salt
1 tsp vanilla essence

Mango Custard Layer
⅔ cup mango puree (from 1 mango)
1 large egg
¼ cup sugar
1 tbsp rice flour
¼ cup coconut milk

In an 7″x5″ rectangle oven proof Pyrex glass dish, combine drained glutinous rice, coconut milk, salt and vanilla essence. Steam for 15 minutes over high heat. Fluff rice with a fork, and continue to steam for another 5 minutes. Remove from heat. Using plastic cling wrap, press rice in the pan to form a compact layer. Set aside.

Whisk egg, sugar and flour in a bowl. Strain mixture into another bowl. Stir in coconut milk and mango puree. Pour custard over glutinous rice layer. Cover cake pan with aluminum foil to prevent water from dripping onto custard during steaming. Steam over low to medium heat for 25 to 30 minutes. Remove foil and continue to steam for another 5 minutes. Remove and allow cake to cool. Place in fridge for 3 to 4 hours for custard to set. Slice and serve chilled.

Note: I used a 7″x5″ rectangle dish but if that is not available, you can use a regular 8″ cake pan. Increase the glutinous rice layer and mango custard layer recipe as follows:

Sweet Rice Layer
1½ cups glutinous (sweet) rice, soaked for at least 4 hours
1 cup coconut milk (If using canned coconut milk, mix ½ cup water to ½ cup coconut milk)
1 tsp salt
2 tsp vanilla essence

Mango Custard Layer
1⅓ cup mango puree (from 2 mangoes)
2 large eggs
½ cup sugar
2 tbsp rice flour
½ cup coconut milk

    What a lovely dessert Biren – this is one of my mum's very favourite sweet treats though we've never tried it with mango. It is a very nice departure from the norm and the colour is so vibrant and inviting!

    Your sweet rice cake sounds so delightful. I think I've actually had something like that and it was delicious. I love how it's not overly too sweet like a lot of other desserts out there.     Thanks LeQuan! I try to use as little sugar as possible in my desserts as I do not like it too sweet. I normally halve the sugar for most recipes and I think it is already pretty sweet.

    Oh hey! OMG! Here I was thinking I was being so creative with my mango “jelut” and was looking through the web to see if there were any other different ways of presenting this dish and here you are! Maybe I should say, “great nyonya minds, think alike” eh? 🙂
    And you’ve even cut it into the traditional diamond shapes. Nice!

      I made this sometime back when the blog was relatively new. I should make it again soon as there are still lots of mangoes in the stores and update the post and pictures.
