Baked Potato and Tuna Croquettes
We all need to have one or two dishes to fall back on when given short notice of a pot-luck, gathering, or party. These quick and easy potato croquettes are just the thing as they can be made with pantry staples. I like to assemble them the night before and pop them in the oven 30 minutes prior to leaving the house. Of course deep frying is an option but I much prefer to stay cool and feel fresh for the event.
Croquettes make great finger food though they are not fancy or glamorous. Watch them disappear at a party. They are also a mainstay in the bento or lunchbox. Minced meat or vegetables may be used in place of tuna fish. By all means make your own mashed potatoes if you prefer. I do that too sometimes but hey, a girl needs a break once in a while! ๐

Oh yes! I freeze them all the time for my boys. Just warm them up in the oven when you are ready to use them.

I like these tuna and potato. I wish I could get my daughter to eat tuna…but she likes trout, salmon and catfish. ๐ These would be great in my bento!

We make something very similar to this in Sri Lanka called cutlets. Of course we deep fry it and that’s probably not so healthy. I love that you baked them. ๐ I also love that you coated them with rice krispies. What a great idea. ๐

I love croquettes but don’t eat them much because of the frying involved. Baking them sounds like a great healthy substitute! Looks just as delicious too minus the oil:D

I’ve never made croquette with tuna. That sounds like a great idea! I always deep fry but I guess people here prefer using oven method. This is a great recipe and I love croquette so much that this dish is as dangerous as chocolate for me in terms of dieting… YUMMY!

Great recipe. I remember growing up my mum used to make something similar. But she used mash, tinned mackerel (the ones in tomato sauce) and added chopped onion, red chillies and a squeeze of lime to it. Rolled it in breadcrumbs and dropped them into the pan.

I love croquettes! I had my first run in with them in Holland back when I was studying there in college. They had them in the vending machines and they made delicious late night snacks. I’m craving one of yours as we speak!

Hi Biren, made these for a party last Friday. They were great and delicious. Most importantly, mess-free!! I like using the crushed rice pop as it is so much easier to handle than the traditional flour, egg and breadcrumbs dip, but best of all, I like the baking part!! My kids like them very much and have already started giving me suggestions on what else could be used instead of the tuna… Thanks for another great recipe!

Looks like a very scrumptious recipe and would like to try it at once. Unfortunately the instant mashed potatoes are not easy to find in our place. How many raw potatoes do you think I should use for the water & milk ratio? Would also want to be adventurous and try it out using sweet potatoes also. Do you think that would work as well? Thanks Justine! For the mash ed potatoes, you can boil 4 to 5 potatoes until quite soft. Then mash with 2 tablespoon butter and probably 1/2 cup milk. Season with salt and pepper according to taste.
