We all need to have one or two dishes to fall back on when given short notice of a pot-luck, gathering, or party. These quick and easy potato croquettes are just the thing as they can be made with pantry staples. I like to assemble them the night before and pop them in the oven 30 minutes prior to leaving the house. Of course deep frying is an option but I much prefer to stay cool and feel fresh for the event.
Croquettes make great finger food though they are not fancy or glamorous. Watch them disappear at a party. They are also a mainstay in the bento or lunchbox. Minced meat or vegetables may be used in place of tuna fish. By all means make your own mashed potatoes if you prefer. I do that too sometimes but hey, a girl needs a break once in a while! 🙂

Baked Potato and Tuna Croquettes
Ingredients
- 2 pouches (6.6oz/187g) instant mashed potatoes, any flavor
- 2 cups (480ml) water
- 1 cup (240ml) milk
- 2 tbsp (28g) butter
- 1 tbsp canola oil
- 1 onion , chopped
- 1 can (5oz/142g) chunk tuna* in water, drained
- Salt and pepper
- 1 cup rice cereals , finely crushed or processed
Instructions
- Bring water in a medium sized saucepan to a boil. Add milk and butter. Turn off heat and stir in both pouches of potato flakes until well blended. Set aside.
- Heat canola oil in a small saucepan. Sauté onions till soft and translucent. Add tuna, salt, and pepper. Give it a stir and turn off heat. Transfer to pot with mashed potatoes and mix till well combined.
- Place crushed rice cereals in a shallow bowl. When mashed potatoes mixture is cool enough to handle, shape into cylinders. Roll in rice cereals and place on a non-stick baking pan.
- Bake** in 350°F (180°C) oven for 30 minutes. Remove and serve immediately.

Oh yes! I freeze them all the time for my boys. Just warm them up in the oven when you are ready to use them.

I like these tuna and potato. I wish I could get my daughter to eat tuna…but she likes trout, salmon and catfish. 🙂 These would be great in my bento!

We make something very similar to this in Sri Lanka called cutlets. Of course we deep fry it and that’s probably not so healthy. I love that you baked them. 🙂 I also love that you coated them with rice krispies. What a great idea. 🙂

I’ve never made croquette with tuna. That sounds like a great idea! I always deep fry but I guess people here prefer using oven method. This is a great recipe and I love croquette so much that this dish is as dangerous as chocolate for me in terms of dieting… YUMMY!

Great recipe. I remember growing up my mum used to make something similar. But she used mash, tinned mackerel (the ones in tomato sauce) and added chopped onion, red chillies and a squeeze of lime to it. Rolled it in breadcrumbs and dropped them into the pan.

Hi Biren, made these for a party last Friday. They were great and delicious. Most importantly, mess-free!! I like using the crushed rice pop as it is so much easier to handle than the traditional flour, egg and breadcrumbs dip, but best of all, I like the baking part!! Looks like a very scrumptious recipe and would like to try it at once. Unfortunately the instant mashed potatoes are not easy to find in our place. How many raw potatoes do you think I should use for the water & milk ratio? Would also want to be adventurous and try it out using sweet potatoes also. Do you think that would work as well? Thanks Justine! For the mash ed potatoes, you can boil 4 to 5 potatoes until quite soft. Then mash with 2 tablespoon butter and probably 1/2 cup milk. Season with salt and pepper according to taste.
