We had a much needed break over the long Memorial Day weekend. We got to sleep in a little and enjoy a more leisurely breakfast which was really nice. On such mornings, I like to prepare something that I would normally not do on a weekday. It was also an excuse for me to use that relatively new waffle iron I purchased from CSN. I won a giveaway coupon hosted by Natasha of 5 Star Foodie sometime back and used that to buy this wonderful waffle iron. It makes nice, thick, and airy waffles.

Gluten Free Buckwheat Waffles

Fresh, homemade waffles are such a treat as they are light and fluffy. These are gluten-free as they are made with brown rice and buckwheat flours. Buckwheat, despite its name is not related to wheat and is not a cereal or grass. It is a fruit seed and contains no gluten, making it suitable for celiacs and those with gluten sensitivities. Flour made with buckwheat is a little tan with tiny dark flecks. It has a distinct nutty and earthy flavor. Baked goods using buckwheat flour has a nice speckled look and a fragrant aroma.

Please note that most Japanese soba or buckwheat noodles are not gluten-free. They are usually made with a mix of buckwheat and regular wheat flours. There are gluten-free buckwheat noodles out there but I have yet to come across them.

Ingredients
  

  • 1 cup buckwheat flour (150g)
  • 1 cup brown rice flour (150g)
  • ¼ cup corn starch (30g)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 large egg
  • 2 cups coconut milk** (480ml)
  • ¼ cup vegetable oil (60ml)

Instructions
 

  • Place buckwheat flour, brown rice flour, corn starch, baking powder, and salt in a large bowl. Whisk to get it well combined.
  • In another bowl, beat egg for about 1 minute. Pour in coconut milk and canola oil. Pour this mixture into flour mixture. Stir to get ingredients well mixed and a smooth batter forms.
  • Pour ½ cup batter onto a pre-heated waffle iron and cook until golden brown, about 3 to 4 minutes.
  • Serve immediately with butter, maple syrup, or jam.

Notes

**Please use regular milk if you prefer.

    I picked up a waffle iron for myself at Christmas (the only way I can get exactly what I want) and used it just once. I need some recipes that will work, my first one – pumpkin waffles was a flop (my family loved it I didn’t). I can’t make just regular waffles, hehe! I will try these, I like buckwheat pancakes. Thanks for the info!

    Your waffles looks wonderful! Have not tried buckwheat waffles before. Been wanting to get a good and reliable waffle maker for ages as mine has gone bananas more than a year ago. Saw a beautiful Cuisinart Waffle Maker at one of the shopping centre, price is a whopping RM999.00! Sigh….!

      Wow, RM999.00 is pretty steep for a waffle iron! I wanted one of those flip ones but they were out of stock. This worked really well too.

      Ahh…you noticed that I used coconut milk. I had a carton sitting in the fridge that needed to be used. Worked really well with the buckwheat flour.

    How nice! You won a giveaway coupon! We have a waffle maker from Costco (the one it flips and all fancy) but we haven’t used it for a while. It’s time to take it out! I like how creative you are using buckwheat instead of regular flour. I don’t have that kind of imagination or flexibility in my cooking skills (zero!). Looks so delicious!

    Biren, I’ve bookmarked this and going to make this soon. I like it gluten free. Btw, some gluten free recipes does use gluten gum. What else can we replace that with? Cornstarch?

      Kristy, do let me know how it worked out for you. Guar gum or xanthum gum is used in gluten-free baking to bind the ingredeints together as rice flour, tapioca flour, corn starch, etc has not gluten or elasticity in them. Egg helps but either one of these gums are still needed for breads and cupcakes. However, I did not use any in these waffles.

    I ate a couple of times buckwheat but never used the flour. Next time I visit the health-store I’m going to look for a pack. Your waffles sound and look delicious.

    Thanks for the recipe. I made them this morning. They turned out quite perfect. The waffles were crispy, nutty and dense. I substituted the cornstarch with potato starch and it worked just fine. I’ll be using this recipe again.
