Dates and Zucchini Bread
This quick and easy Dates and Zucchini Bread is sweet, moist, and dense. It is great for a mid-morning or afternoon snack.
Quick breads are a snap to prepare as the ingredients are simply mixed together in a large bowl, spooned into a loaf pan and baked. In less than one and a half hours you will have a warm delicious loaf on the table. Preparation only takes 15 to 20 minutes and the baking itself is about an hour. No wonder they are so popular.
This Dates and Zucchini Bread recipe was adapted from Better Homes and Gardens New Cookbook. I halved the sugar and nuts and added half a cup of chopped dates. There was enough sweetness in the dates to make up for lack of sugar. Actually I think half a cup sugar is plenty. I also added a half cup milk as it appeared to be a little dry while I was mixing the ingredients together. That really helped as the bread was tender and moist and not too dense.

French Whip 8-inch
Pyrex Prepware 1-Cup Glass Measuring Cup
Nonstick Carbon Steel Baking Bread Pan, 9.5 x 5 Inch, Set of 2

INGREDIENTS
- 1ยฝ cups all-purpose flour (225g)
- ยฝ tsp baking powder
- ยฝ tsp baking soda
- ยผ tsp salt
- 1 tsp ground cinnamon
- ยผ tsp ground nutmeg
- ยฝ cup sugar (110g)
- 1 large egg
- ยผ cup vegetable oil (60ml)
- ยฝ cup low fat milk (60ml)
- 1 cup zucchini (grated)
- ยฝ cup dates (chopped) (80g)
- ยผ cup walnuts (chopped) (25g)
INSTRUCTIONS
- Grease and flour a 9-in x 5-in loaf pan. Preheat oven to 350ยฐF (180ยฐC).
- In a medium bowl, combine all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, combine sugar, egg, vegetable oil, milk, and zucchini. Mix well.
- Add dry mixture to zucchini mixture. Stir until well combined.
- Fold in dates and walnuts.
- Spoon batter into prepared loaf pan.
- Bake for 55 to 60 minutes.
- Remove from oven and cool on a wire rack for 10 minutes.
- Remove bread from pan and allow it to cool completely on wire rack.
NUTRITION

Mmm…that's lots of wholesome goodness in that loaf. If I make this I'll be eating it all alone. My children won't eat. They either eat white bread (seldom) or don't eat at all. I have to bribe my hubby to eat…haha

when i was reading this a kept thinking why does this sound so familiar and then i got to the end and saw your zucchini loaf link and it all made sense. creative combination Biren. Kudos to you for thinking outside of the box like that. I could never come up with such creative combinations.
