Lemongrass and turmeric strongly evoke the tropics and warm weather. With the passing of spring into summer bringing warmer days, my thoughts turn to our imminent vacation to Asia. We are excited about the trip and look forward to a much needed break and change of scenery. I have scheduled some posts to publish every Tuesday and Friday for the next few weeks. This is simple and tasty Lemongrass and Turmeric Chicken dish has a short list of ingredients. My boys call it the “yellow curry”. The red and green peppers give it a pop of color but the star of the show is the lemongrass. It gives the dish a wonderful fragrance. The lime juice lends a nice refreshing touch. Best served with Spiced Basmati Rice.

Lemongrass and Turmeric Chicken

Ingredients
  

  • 20 oz boneless skinless chicken thighs (cut into bite size pieces) (565g)
  • 3 cups cauliflower florets
  • 2 red chilies (seeded and cut into quarters lengthwise)
  • 2 jalapeno (seeded and cut into quarters lengthwise)
  • 3 tbsp lime juice
  • ¼ cup water (60ml)
  • 3 tbsp vegetable oil
  • Salt to taste

Spice Paste

  • 2 lemongrass , thinly sliced the bottom 4 inches
  • 1 medium onion
  • 2 cloves garlic
  • ½ tsp ground turmeric
  • ¼ tsp pepper

Instructions
 

  • Grind lemongrass, onion, and garlic in a blender adding a little water if necessary. Remove and add turmeric and pepper.
  • Heat oil in a pot and stir fry spice paste until fragrant, about 2 to 3 minutes. Add chicken and stir till chicken turns opaque, about 2 minutes. Add water and season with salt. Reduce heat and let simmer for 10 minutes.
  • Add cauliflower and peppers and continue to cook for another 5 minutes until cauliflower is tender. Turn off heat and stir in lime juice.
  • Remove and serve warm.

    Oh yum…I love curry! Curried ANYTHING!! I have to make my own curry blends and have a coffee grinder designated just to grinding spices since most commercial curry blends contain cloves (to which i am allergic). But I work around it. this looks wonderful and now I'm in the mood for a veggie curry for dinner tonight.

    I like turmeric and always have a jar of it in my pantry. Fresh turmeric is actually better for this dish but unfortunately it is not easily available at the stores.

    Dear Biren – I would never have thought to put cauliflower with the chicken but when I think about it, it makes perfect sense because it would absorb all the lovely flavors from the gravy.

    I love the taste that lemongrass gives off. I have never tried lemongrass and tumeric together though, sounds like an excellent combo. This is such a beautiful dish because of the colours you have used. Looks like such a summery dish too. This sounds wonderful Biren, thank you for sharing.

    A curry without chillies in it – why didn't I think of it before? This would be perfect to introduce to my kids, minus the peppers. They are starting to show an interest in the curries we adults eat, but as always, it is too zingy hot for their tastebuds. I will definitely give this a try. Have a lovely lovely holiday to Asia.     Hi Devaki! The cauliflower works really well here as it is such a mild vegetable and can withstand prolonged cooking. I personally like it a little crunchy. As for the lemongrass, I am with you 🙂
